Inspirational Sunday - Being Yourself

"About once a month I run across a person who radiates an inner light. These people can be in any walk of life. They seem deeply good. They listen well. They make you feel funny and valued. You often catch them looking after other people and as they do so their laugh is musical and their manner is infused with gratitude. They are not thinking about what wonderful work they are doing. They are not thinking about themselves at all."

I ran across this quote when reading an opinion column by David Brooks of The New York Times.
(http://www.nytimes.com/2015/04/12/opinion/sunday/david-brooks-the-moral-bucket-list.html?_r=0) I saved it because it just spoke to me.

I meet a lot of people in my life. There are some I meet that I am instantly drawn to. As the quote above states, they are people you are instantly drawn to. They are humble people and are there for others. It isn't that they are doing this just to garner attention or that they are too insipid. Rather, these people are true authentic people.

One of my cousins and I were talking this past week. We both have 'people pleasers' around us. I think they are around everyone. They put this fake face on to the world when inside they are insecure and are afraid to let anyone in to see what a mess they think they are. As you have probably figured out, I am not a people pleaser. I don't know that I ever was. I tried to live that life, thinking it was the proper to 'put a public face on when one was in public' and otherwise behind closed doors, one could be who they wanted as long as that public face shined through.

I do not think God would have wanted us to be like that. I strive to be like the person above. It is hard to do when sometimes all I want to do is shake the other person. But we all have to live our own lives. We can only lead by example and hope that example is like that person above - one who truly believes that money can't buy happiness and truly believes that they can be loved and seen as they strive to live and be and one who doesn't believe they have a public and non-public face. We are not perfect people. We make mistakes and yet we can see them and make changes through our own internal character and with the help of our spiritual belief system.

Just be yourself!

Recipe Thursday - Chopped Salad with Chickpeas with Cheesey Gluten Free Biscuits

I don't know about any of you but I don't like hot weather. If the temperature goes over 40 degrees I am not happy but if the temperature goes over 90, I melt. I usually can't stand to eat hot meals when it is hot outside and I hate turning on the oven or even cook over a stove. Instead I find myself drawn to salads that are super easy to put together and I usually have frozen leftover cooked meats to top it off. This is one of my favorite summer salads and the biscuits? They just melt in your mouth!

Chopped Salad with Chickpeas and Chicken

Ingredients:
2 large Romaine hearts, washed and chopped
1 cup cooked chicken breast
1 can (15.5 oz) chickpeas, rinsed and drained
1 cup grape tomatoes sliced in half
3/4 cup sweet corn (I use what I have canned and froze)
1/4 cup shredded Parmesan cheese (or crumbled goat cheese)
1/3 cup cilantro, washed and chopped
1 small avocado diced
1/2 cup dressing of your choice - I love Raspberry Vinaigrette or Ranch

I toss all the above except the avocado and dressing in a large bowl. Garnish with the diced avocado and drizzle with dressing if you wish. I serve with the following biscuits which I also make a huge batch of and freeze.

Cheesy Gluten Free Biscuits

Ingredients:
6 eggs, separated
6 oz whipped cream cheese, not softened
1/4 teaspoon cream of tartar
1/4 teaspoon dried mustard powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup grated Parmesan cheese
Olive oil (for greasing the muffin tins)

Preheat the oven to 300 degrees. Separate the eggs. Add the cream of tartar to the egg whites and beat them until they form stiff peaks. Add the cream cheese, Parmesan cheese, and spices to the egg yolks and mix thoroughly. Using a spatula gently fold the yolk mixture into the egg white mixture. Be careful not to lose too much volume. Scoop the mixture into the greased muffin tins. Bake for 20-25 minutes. They are done when they are a golden brown. They will look very fluffy but as they cool they flatten a little (this is normal). This should make 12 muffins. I make them ahead and freeze them. I then will defrost them in the fridge overnight and reheat in a toaster oven or microwave.

Inspirational Sunday - Being a Grandmother

I love being a mom but soon enough kids grow up and you are just not as needed as you used to be. It is not the end of the world. You are still their mom but just not as needed as you used to be. It is amazing to watch them start their lives taking what you have taught them and learning new things.

When our daughter first told us she was pregnant, I was overjoyed yet super worried since I knew this was a high risk pregnancy (5 years trying and first IVF attempt). I was there with her when the ultrasound first showed the heartbeat. It was amazing especially since this was all new to me - watching every step from conception. It really gave my belief that life begins at conception all the more meaningful.

The night our granddaughter was born was another milestone. We got to hold her and that feeling of witnessing a miracle came over me and I fell in love again at first sight just as I did with my husband, daughter, and son.

Watching her grow has been amazing. She just turned 2 and is just as beautiful and ornery as her mother was. Sometimes she looks at me and I swear I see my daughter growing up all over again. This time though I get to be her grandmother and not her mom.

Being a grandmother means I don't get to put up with the day to day although I am slightly jealous of her other grandma who watches her Monday through Friday. When we see her once a week, it seems she has learned so much in that week. A couple of weeks ago I introduced her to nail polish and she is hooked and wants her nails polished every time I see her. We also have our special times of reading, snuggling, playing.

When we are with her, she has our total undivided attention. I never had that with our kids. My husband's father was great with the kids but his mother didn't like me and we had to stop sleep overs at their house by the time our oldest was 3 and would listen to her grandmother tell her how mean and smelly I was and to say goodby to me because she was going to get rid of me. That is a very confusing thing to say to a 3 year old about her mother. When my husband and I confronted her, she became the martyr and ran crying to her room. We walked out - yes at Christmas. The kids were never allowed again to be alone with her. She missed so much and my kids missed out learning what a real grandmother is like in their lives. We also had problems with my parents - my father kept up his abuse pattern he had to me but projected it to our son. So no more unsupervised visits to them either.

As I said before, our granddaughter has our undivided attention when we are with her. I know she is learning things I have taught her. She has developed a love for reading I think from me. Just this past week she signed the words I love you to me. I have been doing that with her since she was born. Signing those 3 words and then saying the words as I am signing them. This weekend she signed them back and repeated the words and then gave me the biggest hug every.

She has my heart. And as the saying above: "There is nothing like a grandchild to put a smile on your face, a lump in your throat, and a warm feeling in your heart!" Thank you God for allowing me experience this.

Pet Peeve - Repeating Yourself

I don't know about any of you but this has become one of my top pet peeves. Why is it man can hear and comprehend what they want yet one has to repeat themselves day in day out of the same exact thing?

Am I happy I am married? Yes, married 36 years soon to be 37 and together 38 years soon to be 39. If something happened to my husband, I would never remarry - ever! Do I enjoy being married? Yes. Would I enjoy doing it again and starting over? No.

I have read studies upon studies that people who have been married or together for a long time will become so used to the sound of another's voice that they learn to filter. As Ray in "Everyone Loves Raymond' said in his best man toast for his brother Robert's wedding:
Like today, for example. A lot to talk about. But I think I can put a good spin on it. I think, uh I think there's one thing that can make it all better. Editing. Yes, there's a portion of today's ceremony that we won't need to save on the videotape. Editing...........We remember the good stuff..........I think you're gonna remember about today what you want to remember. Like, at my wedding, I remember it as the day I got to kiss the most beautiful woman in the world. And I hope that's how she remembers it too, as a good day. The start of a lot of good memories.
I think that is what we all do. We begin editing in our marriages. In the large scheme of things, do we remember repeating ourselves a hundred and one times on the same thing? Well, maybe. But you start forgetting that and use other techniques to get his attention. But I tend to use editing. Right now I am trying to edit out these repeating myself moments.

And editing......................................................lots of editing...................................

Recipe Thursday - Paleo Spinach Cheese Omelet

A year or so ago I started trying to eat a modified Paleo diet. I had determined I had a wheat sensitivity since whenever I ate anything with wheat in it, I would get bloated and gassy and nothing else was working to make those side effects go away. My daughter said she had the same thing happen to her and she started on this diet and all that went away. So I started trying to change my eating habits. Slowly I have although I still have a little wheat now but I am much more careful of what goes in my mouth. It usually means we stay in and cook at home now but I learned tricks to freezing and meal preps. Oh - ignore that English muffin there on the plate - I didn't have a picture so just googled for one. That muffin is not on a Paleo diet.
One day I was looking for something different to make for breakfast. I just did a google search and came across this recipe. I wish I remembered the page I found it on so I can give them credit but alas, that is hindsight. So if this is your recipe let me know and I will be glad to give you full credit.

Spinach Cheese Omelet

Ingredients

  • 2  large eggs
  • 1  tablespoon  butter
  • 1  cup  coarsely chopped spinach
  • 1/3  cup  chopped tomatoes
  • 1/8  teaspoon  salt
  • 1/3  cup  (1 1/2 oz.) shredded Swiss cheese
  • 1/8  teaspoon  pepper

Preparation

1. Blend and Pour. Process eggs and 2 Tbsp. water in a blender until blended. Melt butter in an 8-inch nonstick skillet over medium heat; add spinach and tomatoes, and saute 1 minute or until spinach is wilted. Add salt and egg mixture to skillet.
2. Lift and Tilt. As egg mixture starts to cook, gently lift edges of omelet with a spatula, and tilt pan so uncooked egg mixture flows underneath, cooking until almost set (about 1 minute). Cover skillet, and cook 1 minute.
3. Fold and Serve. Sprinkle omelet with cheese and pepper. Fold omelet in half, allowing cheese to melt. Slide cooked omelet onto a serving plate, and season with salt to taste. Serve with buttered toast and fresh fruit.

Inspirational Sunday - Regret

Regret - what a huge word! And I bet you are wondering why on earth I would use that word as part of an Inspirational Sunday.

Well, let's start with the definition. Regret as a verb means to feel sad, repentant or disappointed over something that has happened or been done, especially a loss or missed opportunity. Regret as a noun means a feeling of sadness, repentance, or disappointment over something that has happened or been done.

So what does regret have to do with anything inspirational? Well, one can't go on the definition alone. Are there things I regret? Not really. We are all busy with our lives. We have priorities and we are making the best decision we can at the time. But realistically can anyone tell me a regret they have had in the past 10 years? When I asked some of my friends, most regrets they stated they had were actually things happened to them when they were younger. Or having someone die without a call or leaving something unsettled or unsaid. They were all surprised by my answer.

Attending my 40th high school reunion, I came face to face with some of the bullies and popular kids who I always envied. It was interesting at the reunion to see how they have aged. Most were on their 3rd or 4th marriages. Most were drunk at the party and I am fairly certain that is how they lived their lives. One party to the next. Do I ever regret being like them or a member of their group? No I didn't then and still don't. I always knew I was different from them. I probably won't be attending another reunion but I don't regret going because I understand now why I never had wanted to go before. It was nice catching up with some people but if they were my true friends they would still be in my life today.

Actually I have no regrets. I have done pretty much what I wanted when I wanted to. I am not perfect and I have made mistakes but I don't regret making those mistake because it was the learning experience making that mistake that helped me grow and become who I am today.

So if I don't have any regrets, then why did I choose this as a topic? Because of something my father told me this past week. He stated that if I didn't do this or that or go there or here, that I would regret it my whole life. I told him I had no regrets because every decision I have made since I can remember I have made based on decisions I made. I don't think he liked my answer but I own my answer. I actually asked him if he had any regrets. He asked me why. I said I was just curious. He said he did have regrets. I didn't ask him what they were or if he regretted never knowing who I am as a person because frankly, it didn't matter. He owns his regrets. I don't.

So if you are one who does have regrets - turn those things that you regret into a positive - take those things you regret, dissect them, and use them to change that behavior or action. Never let a negative regret stay in your life. The above quote says it all.
