Recipe Tuesday a day late - Dirty Bird Cake


Yes, it is really called Dirty Bird Cake. It is a recipe that has been handed down a few generations and there are probably quite a few stories about how it got its name. The one I like the best is that it looks like bird poo and I guess it kinda does. It just is super good - kinda like a light version of a spice cake with bananas and pineapple in it. This cake is super moist. It is also super easy, one bowl, great use of spotty browning soft bananas. It travels well and keeps for days. There are few other recipes on the internet that are similiar but are called Doctor Bird Cake.

3 cups Flour
2 cups Sugar
1 teaspoon Salt
1 teaspoon Soda
1 teaspoon Cinnamon
Sift all together.

2 cup Diced Bananas (3 medium size)
1-8 oz. can Crushed Pineapple
1-1/2 cup Cooking Oil
3 Eggs
1-1/2 tsp. Vanilla

Mix all ingredients (by hand) but DO NOT BEAT. Pour into greased and floured tube pan (I have also used a bundt pan). Bake 1 hour and 20 minutes at 350 degrees. Cool in pan right side up.
